Chinese cuisine: Mooncake Cookies (豬籠餅 / 豬仔餅)
Traditionally, the elderly and children are gifted mooncake cookies during Mid-Autumn Festival because the mooncake fillings (red bean paste (紅豆沙), mung bean paste (綠豆餡) and taro paste (芋泥)) are too rich for them. Mooncake cookies are plain and are actually the pastry skin for traditional mooncakes. They're usually in piglet shape hence the literal translation for 豬籠餅 / 豬仔餅 are 'pig in cage cookies' and 'piglet cookies.' We decided to form them in mouse shape to celebrate the Year of Rat in 2020. The recipe was adapted from Siu Kitchen. Scroll down for the recipe.
