It's Dragon Boat Festival (端午節) this month where we eat glutinous rice dumplings (zongzi). My OH decided to make both savoury (Hokkien Meat Zongzi 福建糭) and sweet zongzi. This page is about Alkaline Water Zongzi (鹼水糭) which is a sweet variety of zongziIt's known as "gaan seoi zung" in Cantonese in Hong Kong or "kee chang" in Hokkien in Penang, Malaysia. It has a distinctive yellow colour because of the alkaline water (lye water); however this solution is not always available in Chinese supermarkets. Therefore, this recipe has information on alternative to alkaline water. Some Alkaline Water Zongzi have red bean paste filling but this one doesn't. It's usually served with granulated sugar (in Hong Kong) or coconut palm syrup or kaya (in Malaysia). Scroll down for the recipe.

Los zongziel arroz glutinoso con / sin relleno al vapor en hojas de bambú) se comen durante el festival del Bote del Dragón (端午節) este mes. Mi novio decidí hacer ambos zongzi salados (zongzi con carne de Fujian 福建肉糭) y dulces. Esta página es sobre los zongzi alcalinas (鹼水糭) que es una variedad dulce de zongzi. Mon copain a decidé faire cuire les deux zongzi salé (zongzi à la viande de Fujian (福建肉糭)et sucré. Cette page est sur les zongzi alcalins (鹼水糭) qui est une variété sucrée de zongzi. Ce type de zongzi est aussi connu comme "gaan seoi zung" en cantonais à Hong Kong ou "kee chang" en hokkien en Penang, Malaisie. Le zongiz a une couleur distinctive de jaune à cause d'eau alcaline (du carbonate de sodium) mais cette solution n'est pas toujours disponible aux supermarchés chinois. Donc, cette recette a des informations sur l'alternative à l'eau alcaline. Il y a des zongzi alcalins farcis de pâte de haricots rouge / anko mais cette recette de zongzi alcalins n'a pas de farce. 500g glutinous rice, rinsed ~ arroz glutinoso, lavado ~ riz gluant, rincé
1½ tbsp alkaline water (lye water) ~ agua alcalina ~ du carbonate de potassium
950ml - 1L water ~ agua ~ eau
1 tsp bicarbonate of soda ~ bicarbonato sódico ~ bicarbonate alimentaire
* 950ml hot water ~ agua caliente eau chaude
3 tbsp vegetable oil ~ aceite vegetal ~ huile végétale
18 - 20 bamboo leaves, soaked ~ hojas de bambú, remojadas ~ feuilles bambou, trempées

* 1. If you have alkaline water (lye water), go to step 2. If not, boil 1 tsp of bicarbonate of soda in 950ml hot water for 5 minutes over high heat. Leave to cool down for 20 minutes. Add the rinsed glutinous rice and soak it overnight.
2. Add 1½ tbsp alkaline water (lye water) and 950ml - 1L water to soak the rinsed glutinous rice overnight.
3. Drain the rice and mix in 2 tbsp of oil.
4. Put 35-37g of rice into one bamboo leaf and double knot the dumpling with some string. Pictures on how to wrap a rice dumpling above.
5. Simmer the dumplings in hot water for 2½ - 3 hours or cook in hot water in a pressure cooker for 40 - 45 minutes.

* 1. Si tiene agua alcalina, va la etapa 2. Si no, hierve 1 cucharadita de bicarbonato sódico y 950ml de agua caliente a fuego vivo durante 5 minutos. Lo deja enfriar durante 20 minutos. Pone el arroz glutinoso lavado en remojo toda la noche.
2. Mezcla 1½ cucharada del agua alcalina y 950ml - 1L de agua para remojar el arroz glutinoso lavado toda la noche.
3. Escurre el arroz glutinoso y añada 2 cucharadas del aceite vegetal.
4. Pone 35-37g de arroz sobre una hoja de bambú, luego hace un doble nudo con el cordel. Las fotos de cómo envolver el arroz en hoja de bambú arriba.
5. Hierve los zongzi con agua caliente a fuego lento durante 2½ - 3 horas o hierve con agua caliente en una olla a presión durante 40 - 45 minutos.


* 1. Si vous avez d'eau alcaline (du carbonate de sodium), vous allez l'étape 2. Sinon, faites cuire 1 cuillèrée à café de bicarbonate alimentaire et 950ml d'eau chaude à feu dur pendant 5 minutes. Laissez-le enfroidir pendant 20 minutes. Faites tremper le riz gluant rincé dans l'eau de bicarbonate alimentaire pendant la nuit.
2. Mélangez 1½ cuillèrée à soupe d'eau alcaline (du carbonate de sodium) et 950ml - 1L d'eau pour tremper le riz gluant rincé pendant la nuit.
3. Égouttez le riz gluant et ajoutez 2 cuillèrées à soupe d'huile végétale.
4. Mettez 35 - 37g de riz sur une feuille de bambou, puis faites un double nœud au zongzi. Les photos de comment envelopper le riz dans une feuille bambou ci-dessus.
5. Mijotez les zongzi avec d'eau chaude pendant 2½ - 3 heures ou faites cuire avec d'eau chaude dans l'autocuiseur pendant 40 - 45 minutes.
